Low-Fat Tomato-French Dressing
Ingredients:
½ cup tomato juice
1 tsp cornstarch
1 tbsp red wine vinegar
1 tbsp olive oil
½ tsp Dijon mustard
1 clove garlic, minced
½ tsp herbs, either fresh or dried (tarragon, thyme or basil)
Salt and pepper to taste
Instructions:
Put tomato juice and cornstarch into small saucepan and whisk. Cook mixture on medium to high heat until it boils, stir constantly. Boil for about one minute until mixture thickens. Keep stirring. Remove from heat and mix in remaining ingredients.
Pour the dressing into a jar with lid. It can be refrigerated until needed, but will need a good shaking before using it.
